Tomato, Garlic & Olive Dressing

Serves 4
8oz tomatoes, skinned, de-seeded and chopped
3oz black olives, chopped
1 clove of really garlicky garlic, crushed
4 floz olive oil
1 tbsp lemon juice
1 tbsp white wine vinegar
1tsp grain mustard
1 tbsp chopped coriander
Salt & pepper
Whisk together garlic, olive oil, lemon juice, vinegar and mustard. Stir in tomatoes, olives and chopped
coriander. Season with salt and
pepper to taste.
This is delicious served with our Salmon recipe .
