Really Garlicky Dauphinoise Potatoes

Serves 4

2lb floury potatoes, peeled and finely sliced
1 onion, finely sliced
1 tbsp really garlicky mash
3/4 pt mixed single and double cream
1/4 pt soured cream let down with milk to double cream consistency
Salt & pepper

Layer the potatoes, onion and creams in a lightly buttered ovenproof dish. Bake in a preheated oven Gas 3 / 3250F / 1700C for 1 and a half hours.
