Garlicky Rub Wedges

Serves 4
1 kg potatoes, king edwards or maris piper are best for this recipe.
3 tbsp extra virgin olive oil
1 tbsp really garlicky rub

Preheat Oven to 200C / 400F / Gas 6 (180C Fan)
Scrub potatoes, do not peel. Cut each potato into 8 wedges and place in a bowl. Pour on the olive oil and mix in the rub. Mix to evenly coat all the potato pieces. Tip into a large roasting tin and roast for 30-35 mins. Stir half way through cooking time. Serve with Really Garlicky Mayo.

Alternatively swap the Potatoes for Vegetables such as Carrots, Butternut Squash and Parsnips.
