Garlic Box Potato & Cheddar Cheese Bake

Ingredients
5 lbs. potatoes peeled and quartered
1 cup whole milk
1/2 tsp. white pepper
1 jar (12 oz) Roasted Red Peppers in Olive Oil (diced)
1 cup spring onions sliced
3 cups Sharp Cheddar Cheese grated
2 tbsp. Really Garlicky Mash
1/2 stick butter
1/4 cup parsley chopped
Optional Topping:
1 cup seasoned Italian Bread Crumbs
2 oz. butter melted
1/2 tsp. Really Garlicky Mash Potatao Seasoning

Directions
1 Cook potatoes in salted water until tender.
2 Prepare peppers and reserve all olive oil.
3 Melt butter and mix in Potato Seasoning keeping warm.
4 Strain potatoes, add Garlic Mashed Potato Seasoning, butter, Roasted Red Pepper Olive Oil, white pepper, milk and mash (leave some potatoes in chunks).
5 In a 12 x 9 in. pan, using 1/2 potato mixture, spread evenly on bottom of baking dish.
6 Sprinkle with cheese, peppers, green onions and final 1/2 of potato mixture to cover. Sprinkle with parsley.
7 Cover with aluminum foil and bake 350 degree oven for 15 minutes, then remove foil, bake another 10 minutes.

Optional toppings:
Mix three ingredients, sprinkle on top of potatoes and bake as above.
