West Indies Spicy Garlic Pork Chops

Ingredients
4 pork loin chops
1 tbsp. Roasted Garlic Oil with Scapes
1 medium red onion thinly sliced
1 sweet red pepper, thinly sliced
1 yellow pepper, thinly sliced
4 spring onions chopped
1 oz. pineappple juice or orange juice
1/2 cup jalapeno cheddar cheese grated
1 tsp. Really Garlicky Rub
1 1/2 tsp. ground cumin
1/2 tsp. cayenne pepper
1/2 tsp. sea salt

Directions
1 Mix Garlic Spice Rub, cumin, salt & red pepper in a small bowl
2 Sprinkle on chops and press into meat.
3 Heat Roasted Garlic Oil in 14" pan over medium heat and add chops.
4 Lightly brown on both sides to seal in juices, then cover, turning to cook evenly until almost done.
5 Stack chops to one side and add onions and peppers, saute for a minute scraping the bottom all drippings.
6 Place chops on a small broiler pan lined with foil. Then place equal amounts of peppers on top of each chop, sprinkle with cheese and green onions.
7 Broil lightly until just melted. Serve with pan drippings over rice.
