BEEF STIR-FRY WITH GARLIC SHOOTS AND OYSTER SAUCE

Serves 2

Ingredients:

200g Sirloin Steak

Marinade:
1 tsp light soy sauce
1 tsp rice wine
½ tsp sugar
1 egg white
1 tbsp cornflour
1 tsp grated fresh ginger
2 tsp sesame oil

1-2 tbsp sunflower oil
1 clove garlic, thinly sliced
1 onion, thinly sliced
6-12 garlic shoots, cut into 3-inch pieces
2 tbsp Oyster sauce
125ml water

Place the steak in the freezer for 10-20 minutes until firm to the touch. Slice thinly with a sharp knife against the grain.
Whisk together all the marinade ingredients, add the meat and refrigerate for 20 minutes while you prepare the rest of the ingredients.

Heat a wok or large frying pan until hot and add half the oil the oil, then add the beef. Stir-fry for 2 minutes then tip out onto a plate.

Reheat the pan or wok and add the rest of the oil. Stir-fry the Garlic, Garlic Shoots and onion for 2 minutes. Add the oyster sauce and the water bring to the boil and cook until reduced to a sticky sauce. Stir in the beef along with any juices from the plate, warm through and serve immediately with steamed white rice.
